Cast Iron Chocolate Cake

Ingredients
- 1 10″ cast iron pie skillet
- 1 c all-purpose flour
- 1/2 c sugar
- 1/2 c unsweetened cocoa powder
- 1 tsp baking powder
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1/4 c liquid coconut oil
- 1 egg
- 2 tsp vanilla extract
- 1 c boiling water (slightly cooled)
- 1/4 c chocolate chips- optional
- 1/4 chopped walnuts- optional
- chocolate syrup
- ice cream
Instructions
- Butter & flour the cast iron skillet and set aside.
- Preheat oven (or pellet smoker) to 350.
- With a spatula, mix the flour, sugar, cocoa powder, baking powder, baking soda, & salt in a bowl.
- Boil 1 c of water in an electric kettle (or over the stove) and let cool slightly.
- Mix in the oil, egg, vanilla, and then slowly pour in the water- stirring constantly as to not cook the egg with the hot water. The consistency should be smooth like cake batter.
- Pour the mixture into the cast iron skillet and level.
- Sprinkle on any extras you’d like; chocolate chips, walnuts, birthday sprinkles- and press into the top slightly.
- If using a pellet smoker, bake for 13-15 minutes. Cake will be done when it’s not jiggly in the center.
- If using an indoor oven, bake for 20-25 minutes, also will be done when center is not jiggly.
- Cool for at least 30 minutes before cutting and serving with your favorite ice cream and chocolate syrup!
- Store in an air-tight container for up to 3 days.
