Zesty Italian Char-Grilled Chicken & Veg Skewers

Ingredients

  • 8 Chicken Thighs
  • 2 Zucchini’s
  • 1 package whole Bella mushrooms
  • 1 bottle Zesty Creamy Italian Dressing/Marinade (We like the Chosen brand from Sprouts, it’s creamy & made with Avocado Oil)
  • 1 Jar Pesto
  • Olive Oil
  • Butter
  • Salt & Pepper
  • Italian Seasoning (optional)

Instructions

  1. Prep the chicken thighs by trimming off the fat (if needed), seasoning with salt & pepper, and brushing on some Zesty Italian Dressing and set aside.
  2. Prep the veggies by cutting the zucchini into cubes and alternating the zucchini & mushrooms onto the skewers.
  3. Brush the veggies with olive oil first, then the pesto and season with salt, pepper, & Italian Seasoning (if desired).
  4. Heat the charcoal grill by adding the hot coals to one side of the kettle, leaving the other side available for indirect heat space.
  5. Add the chicken to the indirect side, and brush the other sides with the Italian Dressing. Add pats of butter to each thigh.
  6. Add the skewered veggies to the direct heat side of the grill (over the flames & coals) and grill for a couple mins on each side before removing from the heat and setting aside into a covered pan to keep hot.
  7. Grill each thigh for a few (5-6 minutes) per side and then once the veggies are removed, move to the direct heat for a little more charring and to achieve some grill marks.
  8. Once thighs reach 165, remove and set into pan with the veggies until all chicken is done.
  9. Serve with remaining Italian dressing and a little extra pesto if needed.
