Cast Iron Pecan Coffee Cake

Ingredients

  • 1 1/8 c Gluten Free All-purpose flour, sifted
  • ¼ tsp salt
  • ½ TBSP cinnamon
  • ½ c sugar
  • ½ c brown sugar
  • ½ tsp baking powder
  • ½ c whole milk
  • ¼ c vegetable oil
  • 1 egg, beaten

Topping

  • ½ tsp cinnamon
  • ¼ c sugar
  • ½ c pecans, chopped small

Instructions

In a medium bowl, stir together the flour, salt, cinnamon, sugar, brown sugar, & baking powder.

In a large measuring cup, whisk the milk, oil, and egg.

Add the wet ingredients to the dry ingredients & stir until just incorporated and smooth.

In another small bowl, mix the topping ingredients.

Pour the cake batter into a buttered, floured 10” cast iron skillet.

Spread to edges & level the batter.

Sprinkle the topping mixture over top & swirl gently with a knife.

Bake at 350 for 15-17 min until center is no longer jiggly.

Let cool for at least 15 minutes before serving.

Serve with coffee or vanilla ice cream if desired.

Store in air-tight container room temp for 2-3 days.
