Fig Jam Biscuits

Ingredients

  • 2 ½ c all-purpose flour
  • 1 TBSP baking powder
  • 1 tsp salt
  • 8 TBSP cold, unsalted butter- chopped into pieces
  • 1c whole milk
  • 4-8 breakfast sausage patties *from local butcher recommended
  • 1 Egg per person
  • 1 TBSP butter to cook egg in
  • Salt & Pepper
  • Fig Jam or Fig Spread of Choice

Instructions

Preheat oven to 400. In a large mixing bowl, whisk together flour, baking powder, & 1 tsp salt.

Using a pastry cutter, cut butter into the flour mixture until crumbly (pea sized butter pieces).

Make a well in the dry ingredients and add the milk, stirring just until mixture comes together.

Turn out dough onto floured surface and knead lightly 3-4 times. Roll dough with a rolling pin about 1/2” thick and cut biscuits out with a 2-2 ½” cutter. Makes about 8-12 biscuits depending on how big your cutter is, and how many times you reroll the scraps. Bake on parchment lined cookie sheet, 2 inches apart, for about 10-12 minutes, until tops are slightly golden brown.

Cook the sausage patties in a skillet until no longer pink.

Melt butter into another skillet and fry # of eggs for the amount of people you’re making a biscuit for. Season with salt & pepper & flip to cook the other sides, making sure yolk is fully cooked and not runny.

Assemble biscuits by cutting in half, placing egg and sausage in order as desired, spread on desired amount of fig jam, and top with the other half of the biscuit.
