Smoked Baby Back Ribs

Ingredients
- 1 Rack Baby Back Ribs, halved (about 4lbs total)
- Honey Mustard
- Garlic powder
- Onion powder
- Paprika
- salt & pepper
- Butter
- Brown Sugar
- Apple Juice
- BBQ Sauce of choice
Instructions
- Preheat smoker to 225F.
- Once racks are completely thawed, baste each rack of ribs with honey mustard. We like Maille Hot Honey Dijon Mustard (infused with Mike’s Hot Honey- this was found at Sprouts, which is a Market similar to Whole Foods)
- Create a mixture of garlic powder, onion powder, paprika, salt & pepper to your liking and rub and/or pat the seasoning into the meat side of the ribs.
- Place on smoker, meat side up, and smoke for 2 hours, checking at the 1 hour mark.
- Once you reach 2 hours, remove the racks and start the wrapping stage by placing 2-3 large pats of butter on each rack, sprinkling the entire rack with brown sugar, and then spray them down with apple juice. Then wrap tightly in foil and close the sides. Do not make a tent, wrap them tightly so little to no air can circulate inside.
- Smoke the wrapped ribs for another hour.
- At the 3 hour mark, unwrap the ribs and baste with your favorite BBQ sauce. We like Traeger’s Sweet & Heat.
- At this point, the ribs should pass the “bend test” by easily bending when picked up half way by tongs.
- Close the foil again, and smoke for another 35-45 min, or until the ribs reach 198-200F.
- If after that amount of time, the ribs are stalling out at under 198 and won’t seem to reach temperature, place the wrapped ribs on a cookie sheet in the oven at 400F for about 15 min to bring them to temp.
- Baste with more BBQ sauce and enjoy! Ribs should be fall off the bone easily and should be the hit of the party!
- Serve with any BBQ style favorites! I prefer sweet potatoes with butter, cinnamon, and pecans! Simply bake in the oven 1 hour before the ribs will be ready.
