- 2 cans black beans, drained & rinsed
- 1 c rolled oats
- 1/2 c all purpose OR gluten free all purpose flour
- ½-1 white or yellow onion, chopped
- 3-4 cloves garlic, minced
- Salt & pepper
- About 6 TBSP Olive oil (2 for onions & garlic, 4 for Burgers)
- 1 jar Salsa of choice
- 2-3 ripe avocados
- 1-3 packs of Uncle Bens Basmati Rice (or microwavable rice of choice)
- Guy Fieri’s Flavortown Chipolte Sauce (or chipotle sauce of choice)
Instructions
• Sautee the onion & garlic in 1-2 TBSP olive oil until soft (2-3 min) and remove from heat
• In a large bowl, mix beans, oats, flour, & about 1/3 c of the salsa.
• Season generously with salt & pepper.
• With a potato masher, mash the mixture enough so that most of the beans are mashed, but you can still see some whole beans throughout.
• Add in the cooked onion & garlic and stir to fully incorporate all.
• Shape into palm-sized burgers and place on a plate (Should make 8-10)
• Heat another 2-4 TBSP Olive Oil on a med-high skillet and cook burgers about 3 min on each side until browned and hot throughout.
• Meanwhile, heat rice in microwave & spread onto a serving plate or large serving dish & slice the avocado. (One pack of rice serves 1-2)
• Place desired amount of burgers on top of rice and top with salsa & sliced avocado.
• Drizzle with Flavortown sauce and serve! Serves 4-5.
The burgers heat up really well in the microwave for leftovers the next day.
