Holiday Bourbon Sweet Potato Crunch

This Holiday Cranberry Applesauce is a festive twist on a classic favorite, combining sweet apples with tart cranberries and warm spices. It's the perfect side dish to add a burst of color and flavor to your holiday meals!

Ingredients

  • 4-6 large sweet potatoes, baked
  • ½ cup Kentucky bourbon, OR ½ cup orange juice
  • 2 eggs, beaten
  • ½ cup butter, melted
  • 1c brown sugar
  • Ground cinnamon (1 TBSP or to your heart’s desire)
  • Nutmeg (a few dashes)
  • 1 cup chopped pecans
  • ½ cup brown sugar

Instructions

• Prepare sweet potatoes by piercing each potato with a fork and lining them on a cookie sheet.

• Bake at 350 for 1 hour or until fork tender.

• Cool and scoop into a large mixing bowl.

• Combine all ingredients except the topping, mix with hand mixer so potatoes are more like a puree.

• Combine pecans and brown sugar & sprinkle on top.

• Bake 35-45 minutes.

• Serves 6-8 (or serves none if no one likes sweet potatoes at your holiday dinner.)
