Oven Meatballs with Chili Sauce & Mashed Potatoes

These Oven Meatballs make an easy weeknight dinner perfect for 2-3, or for 1 person with leftovers for lunch the next day! They are good plain, but adding chili sauce really takes them to the next level and brings this hearty meal together with the buttery mashed potatoes!

Ingredients

For the Meatballs

  • Extra Virgin Olive Oil
  • 1 lb ground beef
  • ½ of an onion, chopped
  • 3 cloves garlic, minced
  • ¼ C whole milk
  • 1 egg
  • ½ C Gluten Free Bread Crumbs
  • Salt & Pepper
  • ½ TBSP garlic powder
  • *Makes about 12 meatballs
  • 1 ½ c Chili Sauce of choice, (Dr. Mindy Pelz Keto Chili Sauce from Eat Like a Girl is recommended)
  • Handful of chopped, fresh parsley

For the Potatoes

  • 2 Large Idaho Potatoes, peeled & cubed in large chunks
  • 1 cube frozen garlic, or 2 cloves fresh garlic minced
  • ¾ stick of unsalted butter
  • Splash of milk or heavy cream
  • Salt & pepper to taste

Instructions

For the Potatoes

Boil a pot of water filled enough to cover the chopped potatoes.

Once boiling, add some salt and the potatoes, and cook about 15 min or until fork tender.

Drain and place potatoes into a mixing bowl along with the butter, garlic, and plenty of salt & pepper.

Add a splash of milk or cream as you mix with a hand mixer, adding more milk as needed.

Keep warm with a lid or towel over the bowl until meatballs are ready.

For the Meatballs

Preheat Oven to 375.

Heat the olive oil in a small skillet, and cook the onion and garlic until tender.

Let cool slightly.

Start heating the chili sauce in a separate pan on low.

Add all ingredients except the chili sauce, into a large bowl and mix well.

Shape into walnut sized meatballs.

Line a baking sheet with parchment paper and place the meatballs in rows, and bake at 375 for about 20 minutes or until cooked throughout.

Pour a good amount of heated chili sauce in a serving dish and place the meatballs on top.

Sprinkle with fresh parsley if desired.

Serve with the potatoes.
