Quinoa Harvest Bowl
This Quinoa Harvest Bowl is a vibrant and nutritious dish packed with roasted vegetables, fresh greens, and protein-rich quinoa. Topped with a tangy dressing, it's a perfect, wholesome meal for any time of day!
Ingredients
- 1 cup quinoa, cooked to package directions
- 1 cup chopped or pulled cooked chicken (optional)
- 1 package frozen sweet potato cubes, baked, plus more for topping
- Dried cranberries (about a cup)
- Pumpkin seeds (pepitas) (about a cup)
- 2 apples, chopped
- Balsamic Vinaigrette (to drizzle)
- Crumbled Feta Cheese (sprinkle to desired amount)
Instructions
• Once quinoa is cooked and sweet potatoes are baked, mix in a large mixing bowl along with the optional cooked chicken.
• Sprinkle all other toppings on top of the quinoa mixture (add any extra sweet potatoes on top as well) and arrange colors evenly to make it pretty.
• Drizzle balsamic vinaigrette and crumbled feta on top and serve immediately.
• Can be prepared ahead by mixing the quinoa & chicken and refrigerating until ready to reheat and add the rest.
• Serves about 4 (or as a holiday side-dish, it will serve more due to portions being smaller than a full bowl you would normally eat for lunch)
