Shrimp Tacos with Smoked Salsa Verde

Ingredients
- 1 1/2c Homemade Smoked Salsa Verde (see Smoked Salsa Verde Recipe on this site) OR store-bought Salsa Verde
- 1 lb Raw Gulf Shrimp- peeled, deveined, tails-off
- 1 packet of your favorite Taco Seasoning
- 1 Disc Queso Fresco- crumbled
- Corn tortillas
- 2-3 sliced Avocados
- Fresh Cilantro- chopped
- Olive Oil
Instructions
- Rinse and pat dry the shrimp.
- Season well with Taco Seasoning.
- Heat a little olive oil on the griddle or skillet to medium-high heat and cook the shrimp about 2-3 minutes per side until reaches 145F. Then remove from griddle.
- Heat a little more oil, then heat and brown the corn tortillas on each side.
- Plate with sliced avocados, crumbled queso fresco cheese, and garnish with fresh cilantro.
- Enjoy!
Notes
This recipe only takes longer than 20-30 minutes to prepare if you're also making the homemade Smoked Salsa Verde. It can be made ahead of time if desired.
